Cooked Pasta, Chopped Bacon, Spinach, Cherry Tomatoes, Roasted Butternut Squash, Roasted Sherry Shallot Cream Sauce, Toasted Pumpkin Seeds, Butter, Parmesan to garnish
In a hot pan melt 1oz of butter, add 5 cherry tomatoes, 2oz of butternut squash. Cook until tomatoes blister, add 4oz of cooked pasta and 2oz of chopped bacon, combine together until bacon and pasta are warm, add in 2oz roasted sherry shallot cream sauce heat until sauce is desired constancy and everything has been heated throughout. Serve in pasta bowl, garnished with 2oz baby spinach & 1oz toasted pumpkin seeds.
